Coffee cake anyone??

A delicious and very easy coffee cake to prepare and bake.


Prep time: 10 min

Cook time: 25-30 min


Total time: 40 min


Ingredients:


  • 6 eggs
  • 1/2 cup of sugar
  • 1/2 to 1 cup of flour (add until just right)
Cream:
  • 1/2 a can of condensed milk
  • 1 pack of cream cheese
  • 1 tub of 12 oz cool whip
  • 1 stick of butter




  • 1-2 cups of coffee




Preparation: 


Make REALLY strong dark coffee. (won't taste strong in cake) Add sugar and let it cool.


Move the oven rack to the top and turn on oven to 350.



        On HIGH, beat the six eggs. After the eggs are all beat well, gradually add the sugar. Beat on HIGH for about 5 minutes or more. Until the mixture turns a light yellow color and is fluffy. Then, put the mixer on STIR or the SLOWEST it can go and slowly add the flour. Make sure it mixes in well. Turn off mixer after flour is mixed in well.

        In a round 8" cake pan, 
 put butter all over pan (bottom and all sides). Then, put a little bit of flour in the pan and tilt the pan in all sorts of directions and gently pat on the side of it for the flour to spread all over the pan.
        Pour the cake mix into the pan gently so it won't settle and GENTLY put on top oven rack and GENTLY close the oven without slamming the oven door and set the timer for 20-25 minutes. After timer goes off watch it and test it out with a tooth pick every few minutes.

Cream:

      In mixer, put one pack of cream cheese beat on HIGH. Then add 1 stick of butter(make sure not too hard). Then add cool whip. After everything is mixed in gradually add 1/2 a can of condensed milk or more to your desired taste.


     Once cake is backed, take out of oven and gently lay to cool. DO NOT TAKE OUT OF PAN UNTIL COOL. After it cools, flip over an take out cake, make sure doesn't brake. Cut in half and with a spoon soak the cake with the coffee from the inside part until nice and moist. Then put the top part of the cake that you cut on a plate and put as much as cream as desired (you can also add nuts). Then put the bottom on top so the top of the cake is flat. Then, add cream all over cake and sprinkle with chocolate or nuts.


Refrigerated before serving.
